At GINGER FOX, every bake is an expression of craft and commitment to excellence. Our Thanksgiving collection honors the classics through a modern lens - each piece is handmade in small batches.
This year’s menu features the season’s most exquisite staples: mile-high apple and pumpkin pies, the debut of our incredible pecan pie rich with brown sugar caramel, our celebrated vegan sweet potato “cheesecake,” and laminated favorites like croissants, sticky buns, and cinnamon rolls. Every bite is grounded in mastery, balance, and just the right amount of decadence.
All pre-orders will be available for pick-up Tuesday, November 25 and Wednesday, November 26. Select items will also be available for in-bakery purchase throughout Thanksgiving week.
To maintain quality, pies and pastries are best enjoyed the day of pick-up or stored as indicated on the care cards provided with each item.

Pumpkin Pie | Silky pumpkin custard infused with warm spice, set in a buttery pâte brisée crust. Decorated with freshly whipped cream and candied pepitas for a refined finish.
Mile High Apple Pie | A classic double-crusted apple pie, hand-laminated and filled with three pounds of tart Granny Smith and sweet Honeycrisp apples. Baked slow for deep caramelization and perfect structure - our ode to tradition.
Pecan Pie | Toasted pecans in a brown sugar caramel custard, encased in an buttery pâte brisée tart shell. Subtly sweet, with a clean finish and impeccable artistry.
Sweet Potato Cashew Cheesecake | Vegan and gluten friendly. Cashew-based, double-layered “cheesecake” pecan date crust. Garnished with candied pecans and lemon, cranberry, fresh fig, and rosemary. A plant-based centerpiece - decadent, balanced, and wholly original.
Carrot Naked-Style Cake | Our signature carrot four-layer cake (three layers for 9") —dense and moist layered with cream cheese frosting. Finished in our naked style to reveal its texture and integrity. Elegant, balanced, and quietly decadent.
Assorted Seasonal Cupcakes | Gluten friendly. A seasonal flight of cupcakes - signature Carrot with seasonal Cherry Chocolate and Lemon Meringue. Balanced sweetness, moist, elegant finish.
Assorted Croissants | A trio of 3-day laminated favorites: Classic Butter Croissant, Pain au Chocolat, and our seasonal Apple Pie Vanilla Custard Cruffin. Buttery layers, golden exterior, perfect flake.
Assorted Morning Pastries | A curated selection of our GINGER FOX bakery morning classics and seasonal favorites: Blueberry Streusel Muffins, Cranberry Jam & Butter Vanilla Scones, Carrot Cake Muffin Tops (vegan), Herb & Feta Scones (all gluten friendly), and Pumpkin Loaf. Balanced flavors, refined textures, always baked fresh.
Cinnamon Rolls | Our signature sweet brioche cinnamon rolls with cinnamon sugar layers and decadent icing. No two are ever the same making them “just a little mischievous”.
Sticky Buns | Caramelized brioche spirals with toasted pecans, brown sugar, and spice. Baked in caramel until glossy and irresistible.
Classic Charcuterie | From our sister brand, PALETTE, a timeless artisan spread of meats and cheeses featuring Short Creek salami, prosciutto, and soppressata with Camembert, 5-Spoke cheddar, Great Hill bleu, whipped Boursin, and rosemary-aged Manchego — paired with apricots, figs, grapes, almonds, Castelvetrano olives, cornichons, lavender honey, berry jam, and whole grain mustard.
Smoked Salmon & Trout | From our sister brand, PALETTE, a rich, smoky seafood spread featuring smoked salmon and smoked trout with cucumber ribbons, baby radish, shaved fennel, caperberries, jammy eggs, and tri-colored baby carrots. Served with pickled red onion, tzatziki, whipped Boursin, seasonal cashew cream cheese, lemon, dill, cracked black pepper, and Himalayan pink salt.
Sunburst | From our sister brand, PALETTE, a colorful, vibrant vegetable board with cucumber, watermelon radish, assorted grape tomatoes, baby whole carrots, broccolini, baby bell peppers, sugar snap peas, and tri-colored cauliflower. Paired with cilantro hummus, red pepper hummus, beet whipped goat cheese, avocado cilantro dipping sauce, and edible flowers for a visually stunning spread.
Berry Melon | From our sister brand, PALETTE, a colorful fruit graze with grapes, assorted melon, pineapple, strawberry, blueberry, grapefruit, blackberry, raspberry, oranges, and kiwi. Topped with almonds and paired with honeyed Greek yogurt and avocado chocolate mousse for a fresh, vibrant finish.
