Founded by Jennifer Wilder, GINGER FOX brings together the artistry of European pastry and the warmth of New England hospitality. Every creation is made from scratch, shaped by hand, and baked with intention.

From Dream to Oven
In 2015, Jennifer opened her first experiential restaurant, LANEY & LU, in Exeter, New Hampshire. Her vision was to create a vibrant space that nourished both body and spirit - where conscious, plant-centric food and joyful community could coexist. LANEY & LU quickly became a local favorite and earned national recognition for its innovation, culture, and heart. Now located in Portsmouth’s West End, it continues to serve as a hub for wellness, creativity, and belonging.
LANEY & LU also serves as the creative kitchen behind PALETTE, a sister brand that transforms gatherings into edible works of art through curated cheeses, charcuterie, and seasonal accompaniments.
Building on that foundation, Jennifer and her team launched GINGER FOX in 2022 - transforming the former Sweet Dreams Bakery into a modern pâtisserie dedicated to the craft of baking, incredible coffee and tea, and the finest sandwiches. GINGER FOX celebrates old-world technique with modern imagination: laminated croissants, French-inspired pastry, infamous cinnamon rolls, and seasonal specialties, all made from scratch with mindfully sourced ingredients.
Together, these brands form the ALTITUDE COMPANIES portfolio - a collective of elevated hospitality experiences built on values of integrity, community, and connection.

Every croissant folded in our kitchen, every scone pulled from our oven, carries with it the fingerprints of the baker who made it and the care of the community that surrounds us. We source locally whenever possible, choose sustainable practices, and create with both artistry and intention.
